Description: Lipid peroxides are the products of chemical damage done by oxygen free radicals to the polyunsaturated (double-bonded) fatty acids of cell membranes. They cause a variety of toxic effects at the cellular level and their creation is considered a extreme process in biological systems. Their formation can be blocked by antioxidants, such as vitamin E, structural separation or low oxygen tension.
